In 2009, a major change occurred at Hayakawa Brewery, which had been a family-owned brewery producing less than 50 koku (approx. 9,000 Liter) of sake. Toshihito Hayakawa, the fourth-generation president, brewed a single tank of sake himself. The sake, which was named "Tabika" has been improving in quality and gaining fans year after year. We dive into the reformation and its backstory.
