Sharing the Terroir of Eiheiji with the World – Unlocking the Potential of Agriculture and Sake Brewing from a Depopulated Region

Founded in 1806 (Bunka 3), Yoshida Shuzo is home to both the traditional Kitajima brewery and the modern Kippoh brewery, where visitors can observe the brewing process through an external viewing corridor. This new facility was developed by Symphony Yoshida Sake Brewery Co., Ltd. a joint venture established in the summer of 2021 with a Hong Kong-based general trading company. Completed in the fall of 2023, the facility marks the beginning of a new challenge—one focused on overseas exports. The newly launched brand Eiheiji Hakuryu champions the concept of Eiheiji Terroir, a vision that unites the natural environment of Eiheiji Town with the art of sake brewing. This article explores the possibilities this new brewery holds, and delves into the brewery owner Yukari Yoshida’s vision for the future.
