Equipped with curiosity and a spirit of challenge, at times even failing, Saiya Shuzoten has continuously strived for the ideal sake. At the root of it was the toji (brewmaster) Mr. Toichi Takahashi’s idea of "delivering the natural powers of microorganisms directly to the brewery," and the generosity of the brewery, willing to embrace new methods however revolutionary. It is indeed sake brewing that is ever evolving, spun by the team effort of the brewery and its toji.
