Shoichi Sato of Sakata Shuzo is today a nationally-renowned and celebrated toji (brewmaster). He brews “Jokigen (上喜元),” which draws out the characteristics of rice, expressing warm and delicate nature of the handicraft. At the origin of his profound flavors lie numerous techniques Mr. Sato inherited from his senior brewers to whom he pays enormous respect. These secrets and theories will be now transmitted to newer generations by Mr. Sato.
