In Sagae-shi, Yamagata, where Chiyokotobuki Toraya is located, sake made from local rice and water has long been brewed by the local people. At the same time, the city has actively brought in toji (brewmasters) from outside the prefecture and introduced new equipment to improve the quality of its sake. All of this is for the purpose of spreading the popularity of genuine local sake from Yamagata to more people and encouraging them to drink it. We took a close look at the brewery's focus on local production and its commitment to brewing sake.
