Aoki Shuzo has been brewing sake in this area for 300 years with the philosophy of “wago” or harmonization. They continue their steady growth as a brewery while also have committed their effort to revitalize the local Minamiuonuma region. What kind of ideas have they held, and what have they done to pass on to the next generation the brewery’s history and regional culture they themselves inherited?
