In nature-rich Okutama, lies a 300-years old brewery, Ozawa Shuzo. Previously a preserver of traditional methods used by Echigo brewmasters, with the transition to a permanent workforce, it has been successful in undertaking new brewing challenges. There resides a president that seeks to create the value of a local brewery, and an unrelenting brewmaster looking to deliver the ideal sake.
