Nishida Shuzoten, brewer of “Denshu,” caught sake lovers’ attention all over Japan by their improvement by the day and repeated large-scale investment in equipment. At the backstage was the brewery’s attitude that questioned various problems that the industry had long held as “common sense” and devotedly pursued the right path. We followed the footprint of the brewery that has sought after delicious sake.
