However, this brewery turns away from this trend and goes all into the niche market of “junmai and maturation” for its survival. The quiet scientist with no blood relations to the founding family has an ecological gaze with a mission “to communicate invisible bacteria’s activities.” We followed this all-junmai brewery that transmits Chizu terroir.
