Kawanishiya Shuzoten’s “Tanzawasan” is a sake meant for heating. “Junmai kanzake complements food and is easy on the body, allowing you to drink more." The brewery's president, Masakazu Tsuyuki, believes that junmai kanzake is the sake to increase consumption of Japanese sake, so he continues to brew kanzake that can be enjoyed daily, by procuring the rice in a focus on junmai.
