From Gifu to Hokkaido: The future of local sake breweries, working hand-in-hand with Higashikawa Town

It was November 2020 when the Michizakura Shuzou moved from Nakatsugawa City, Gifu Prefecture to Higashikawa Town, Kamikawa District, Hokkaido. At the time, the brewery attracted attention as one of the few public-private sake breweries in Japan. Currently, sake brewing is progressing smoothly with a five-person team consisting of brewers who moved from Gifu Prefecture and locally hired staff. We investigated the current state of this vibrant brewery, which is actively taking on the challenges of new endeavors.
