It was 2017 when Tsuchida Shuzo changed its brewing policy in a drastic manner. This drew attention in less than 5 years. That is because it was not a one-time large-scale reform, but the brewery kept implementing new initiatives. Sake industry’s common sense is not a concern of this brewery; rather, they are enjoying the utmost basis of sake brewing—interaction with microbes—in diverse ways.
