Mr. Naohiko Noguchi, who had retired earlier, came back to brewing as toji in 2017. “I want to brew sake that delights drinkers,” is the thought drives him at age 89 to evaluate water absorption of rice and results of rice steaming as well as to sprinkle koji spores in a hands-on manner. This is exactly what a legend would be, facing sake brewing in all honesty with love.
