Disseminating the appeal of Japanese sake.

Hakkaisan Brewery, which brews some of Niigata Prefecture's representative sake, has been producing high quality sake that is both light and well-balanced, made possible by Uonuma's climate and advanced brewing technology. At the same time, the company’s business development based on the theme, "rice, koji, and fermentation” is attracting a lot of attention from the industry. What are the efforts and thoughts of this brewery, which has boldly taken on the challenge of doing what it can as a sake brewery in the continuously shrinking sake market? We interviewed the brewery to learn more about its future plans.
