Despite the theoretical education he received in sake brewing, the brewmaster (and also the owner) of Miyoshino Sake Brewery discovered the true path he should follow upon re-encountering the cedar forest of his hometown, Yoshino. This article will follow his one and only challenge to brew sake that exudes the “uniqueness of Yoshino” by only using naturally occurring yeast.
