Takahashi Shosaku Sake Brewery has followed “Dosan Doho (local food prepared by local methods)” with the proposition “sake brewing only this locality can produce.” In their rice farming effort, they reached another goal to develop particular flavors from each rice field, or “Itta Ichijo (one field, one ferment).”
