Disseminating the appeal of Japanese sake.

In the fall of 2022, Azumatsuru Shuzo temporarily suspended its production of junmai-shu and junmai ginjo. Then, following six months of thorough contemplation and experimentation, ‘Azumatsuru THE ORIGIN’ was born. Brewed under meticulous planning, the sake with its balanced bitterness and light acidity, with ample umami in its freshness is the brewery’s work of confidence. The destination reached after the reevaluation of their signature sake was simply a desire to “brew good sake”.
