The news of Dassai's expansion into New York State with a new brand quickly made waves across both Japan and the United States. Chairman Hiroshi Sakurai, who relocated to the U.S. to personally oversee the operation, calmly states, "Dassai is Dassai, no matter where it’s made." However, the challenge of brewing sake in a land with different environments and cultural contexts brought about a series of unexpected difficulties. We spoke with Sakurai about the realities of brewing on-site and his vision for the future.
