Kanenoi Shuzo, located in Kurihara City, the northernmost part of Miyagi Prefecture, engages in the art of sake brewing. Their flagship brand, “Wataya,” advocates for a new concept called ‘Meal Companion Sake’, distinct from conventional meal-pairing sake. Loved by renowned chefs, this sake reflects a brewery’s pursuit of their ideal, uncompromised by trends. We sat down with Motonori Miura, the brewery owner, to learn about the originality and innovations behind the taste of Wataya.
